In keeping with my celebration this week of the Pantone Color of the Year, today I’m sharing the recipe for a very green kiwi avocado smoothie! Sounds weird right?! Well despite that, it’s super tasty so I encourage you to give it a try. And, for all my Whole30 friends, this recipe is Whole30 compliant even though smoothies are frowned upon (it’s preferred that you chew your food rather than drink it).
Here are the ingredients for two smoothies:
1/2 cup of spinach
2 granny smith apples
2 kiwis
1/2 cup of lime juice
1 avocado
1/2 cup of ice
1/4 cup of water
First up, I prepped the fruit. Now, am I the only one who didn’t know the trick to get a kiwi out of its skin? Chelsea’s SIL showed me an awesome trick over the holidays when we created this fruit wreath together:
So here’s the trick: first you slice off the end of the kiwi, then, using a large spoon you carefully scrape around the edge of the kiwi right next to the skin and TA-DA! The kiwi just pops out. I seriously never knew that until Christmas.
Magical, huh?!
Next I prepped the avocado, apples, and lime juice, then put everything into the blender including the water and ice.
With a few pulses of the blender, the smoothie was ready!
It’s super thick, which I like. To make it a little thinner, more water would do the trick. A splash of apple juice could also thin it out a bit to avoid it getting too watered down.
The main flavors I taste are the apple, kiwi, and lime. The avocado makes it creamy, and you can’t taste the spinach at all! For a little crunch, adding a small handful of chia seeds would be perfect.
This smoothie would be great for a springtime brunch or a St. Patty’s Day breakfast! Delicious and simple = win win!
