Hi everyone! Happy Tuesday from Sunriver, Oregon. I’m having the best time this week with Chelsea’s family. I look forward to this week all year long, because it’s so relaxing and fun, and Sunriver is beautiful!
During this week, each family is assigned a night to cook dinner for everyone and tonight is our night! If you’ve read my blog for a while, you might recall that last year we did a Greek dinner and tonight, we’re going TROPICAL!
I’m making the cocktail for dinner, and it is very simple, very delicious, and it could be a mocktail, too!
Here’s what you’ll need…
For two cocktails:
- 1/4 cup pineapple juice
- 3/4 cup mango juice
- 3 tsp. coconut cream
- 3/4 cup sprite
- 1/4 cup rum (leave this out for the mocktail)
- splash of grenadine, for color
- limes, for garnish
Mix everything except the grenadine and limes in a cocktail shaker. Careful when you’re shaking, since there’s Sprite inside. Since it’s carbonated, you will want to take the top off slowly to avoid a Sprite explosion!
Once it’s all mixed together, add ice to your glass, then pour the drink in. Add a splash of grenadine to create a pretty layered effect, top with a lime wedge, and serve!
If you want to make a big pitcher of cocktails, like we’ll be doing tonight, just do each ingredient times 4 and stir it all together in your pitcher. Make a second pitcher leaving out the rum for mocktails, then label each pitcher so guests know which is which. Then, set out a big bowl of ice, the bottle of grenadine, and lime wedges, and guests can make their own cocktails!
