Hi there, friends. I have a tasty cocktail to share with you today, but I’d be remiss if I didn’t first mention my heartfelt concern for everyone affected by Harvey. So much devastation, and my thoughts and prayers are with everyone there.
It’s been so nice to get back into blogging this week to share the details of my trip to Europe. Yesterday I kicked off Italy Week with a post about my time in the Cinque Terre. Loved it there so much, and cannot wait to get back. Check out the details here.
Today, I’m sharing a delicious cocktail recipe inspired by Limoncino! I got a souvenir bottle of Limoncino in Cinque Terre, but they sell it at the grocery store, too, so you could definitely recreate this recipe for yourself.
You may have heard Limoncino called Limoncello, and before my trip to Italy, that’s the only name I knew it by, too. Like many things in Italy, the naming is based on the region you’re in. In Northern Italy the tasty lemon liqueur is called Limoncino, and in Southern Italy, it’s called Limoncello.
Here’s what you need for two cocktails:
- 2 cups Prosecco
- 1/2 cup Limoncino/Limoncello
- Frozen raspberries
- Sprigs of mint leaves
Mix the Prosecco and Limoncino together, top with raspberries and mint leaves, and serve. Easy peasy, lemon squeezey!
It’s so refreshing, and the perfect cocktail to wrap up summer!
