It’s a very tasty Tuesday today for sure! This week, I’m celebrating the Pantone 2018 Color of the Year with all things ultra violet. Yesterday I kicked off the week with an ultra violet wreath. Read about it here.
And today, it’s a tasty ultra violet treat! When thinking of a recipe, I was inspired by all the beautiful smoothie bowls I’ve been seeing on Instagram, so I decided to make one myself. I used my previous smoothie-making experience to recall what fruits I’d mix to get an ultra violet hue: blackberries and blueberries. So I bought those (frozen), plus some fresh blackberries, vanilla yogurt, bananas, chia seeds, granola, and pomegranate seeds.
I put 1 cup of frozen blackberries, one cup of frozen blueberries, a whole banana, a packet of chia seeds, and a single-serve container of vanilla yogurt into my Vitamix and blended until smooth. After the first blending, it was a little too pink, so I added a few more blueberries until I got the perfect ultra violet color.
I poured the smoothie mixture into a bowl, then topped it with fresh blackberries, pomegranate seeds, and granola. It is so delicious, and I love that it is healthy and tasty!
As a final note: I love the Vitamix! I’ve had other blenders in the past, and they just don’t compare to how quickly this one blends everything and how easy it is to clean. If you’ve ever considered one, I highly recommend it!
