Happy Thursday! Today’s Thirsty Thursday recipe is a cocktail that sticks to a theme of bees! On Monday, I shared a bee-themed party for my niece.

And today, I thought it’d be fun to share a cocktail that includes honey! I’m a big fan of Palomas (a traditional Mexican cocktail with grapefruit juice and honey), and I decided to mix it up and sweeten it up a bit by adding some honey.
In order to make this cocktail, first I made some honey simple syrup by mixing equal parts honey and water until the honey was dissolved into the water. I let the mixture cool to room temperature, and used what I needed for the cocktail, and stored the rest in an airtight container.
Here’s what you’ll need for one cocktail:
- Ice
- Salt for rimming the glass
- Grapefruit slices
- 2 ounces grapefruit juice
- 1 Tbsp. lime juice
- 1 tsp. honey simple syrup
- 2 ounces tequila
- Club Soda
When it’s time to build the cocktail, here’s what to do:
First, rub a grapefruit slice around the rim of your serving glass and dip into salt to create your salt rim. Next, fill the glass a little more than half full with ice.
Pour the grapefruit juice into the glass, then add the lime juice and honey simple syrup. Next, add the tequila and then top with club soda. Add a grapefruit slice to the glass and serve!
This cocktail would be great for a party: you could make a big batch of the mix in a pitcher, set a bottle of club soda next to it along with some grapefruit wedges and you’d be party ready!
