I’ve been getting into the summer spirit on the blog this week with all things watermelon! On Tuesday I shared a delicious sugar cookie recipe, and yesterday I blogged about our watermelon porch makeover.

Today I’m sharing a delicious recipe for a super summery cocktail: a watermelon grapefruit mojito. This cocktail was a happy accident because as I was juicing the watermelon, I realized it was not going to yield enough juice but I didn’t have time to go to the store. Luckily, I had some ruby red grapefruit juice in my fridge, and I thought the two would compliment each other nicely, so I went with it.
To prep for taking the cocktail to a party, here’s what I did…
First, I gathered the ingredients for the mint simple syrup:
- 2 cups water
- 2 cups granulated sugar
- 2 handfuls of fresh mint, roughly 40 leaves
Next, I gathered the ingredients for the watermelon puree:
- 8 cups cubed seedless watermelon about 1/2 mini watermelon
Then, I gathered the rest of the ingredients for the mojito:
- White rum
- 1 and 1/3 cups lime juice
- Club soda
- Ice
- Optional garnishes: watermelon, limes, mint
Once I was home, it was time to prep everything. First up was making the simple syrup. I did this by combining the water, sugar, and mint in a small saucepan. It was brought to a boil then boiled until the sugar was dissolved. Then I removed it from heat and chilled it. (I made way more of the syrup than I needed, so I could have it on hand for future cocktails.)
While the simple syrup chilled, I made the watermelon puree. I placed the watermelon cubes in a blender and processed until smooth. Then I poured through a sieve to remove any lumps. It was at this point I realized I needed a lot more juice – this process yielded about two cups worth. So, I added in the grapefruit juice to make the whole mixture four cups worth.
When it was time to head to the party, I put each of the ingredients into their own vessel and set it all out in a build-your-own style on the bar.
For one cocktail, here’s what I used:
- 3/4 cup watermelon grapefruit juice
- 1 oz or 2 oz rum (this depends on your preference)
- 2 Tbsp. lime juice
- 1 tsp. simple syrup
I put all the above into a cup, then added ice. Then, I topped the mixture with club soda, added the garnishes and a straw and served.
The cocktail was a big hit, and I know it’ll be on repeat this summer!
