Only three days away from my favorite sporting event – the Olympics! I love it all, and I especially look forward to the opening ceremonies, swimming, track and field, and gymnastics.
If you’re like me, and you want to celebrate or if you’re just looking for a festive tasty treat, these are fun, quick, and easy to make!
First I gathered my ingredients and then made the cupcake batter according to the directions on the package. I recently started using coconut oil instead of vegetable oil and I LOVE it! It doesn’t change the flavor at all, but it does make the cupcakes moist and healthier.
Next, I placed the cones in my cupcake pan and filled each one with a scoop of batter, then into the 350 degree oven they went for 20 minutes.
When they came out, they definitely didn’t look pretty, but they would soon be covered with frosting, so no biggie there!
I added a few drops of yellow food coloring to the white frosting, and then frosted each cupcake. After that, I did a swirl with the orange sparkle gel frosting, and then used a knife to swirl it into the frosting to give it a fire-y look.
I had some batter and frosting leftover, so I also made some regular cupcakes. I added some blue food coloring to the frosting to make it green, got out some Rolos (yes I have a stash of those in my pantry, because YUM!), and some Sour Punch straws (I did have to run to the store for those). I turned those ingredients into gold medal cupcakes. I used the green, yellow, and blue color scheme to match the Brazil flag.
And now, desserts are ready for Friday! Here are a few pictures of other ideas from my last Olympics party in 2012. We did the torch cupcakes then too, and both the brownies and ring sugar cookies were super simple and easy to make.
