One of my favorite things to do in the fall is bake, and I have been testing out some pumpkin loaf recipes lately. I combined a few to come up with my own version, and it’s pretty tasty if I do say so myself.
Here’s what I used:
3 cups sugar
4 eggs
1 cup vegetable oil
3 1/2 cups flour
2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
2 tsp ginger
1 tsp nutmeg
1 tsp cinnamon
1 tsp cloves
2/3 cup water
1 can pumpkin (15 oz)

And here’s what I did:
Preheat oven to 350 degrees and lightly grease mini loaf pan.
In a mixing bowl, combine the sugar, oil and eggs and beat until smooth. Add the water and beat until blended. Stir in pumpkin, ginger, nutmeg, cinnamon, and cloves.
In a separate medium bowl, combine flour, soda, salt, and baking powder. Slowly add dry ingredients to pumpkin mixture and blend until all ingredients are just mixed.
Scoop equal amounts of batter into each mini loaf.
Bake in oven until a toothpick comes out clean, about 20 to 25 minutes.
Let the bread completely cool in the pan. After cooled, wrap bread in parchment sheets and tie with ribbon for gifting.
These loaves would be a perfect hostess gift! Or, a great favor for all your Thanksgiving guests!
