This weekend, we got together with one of our besties to watch the F•R•I•E•N•D•S reunion, and I couldn’t pass up this opportunity to make something festive for the occasion! When thinking back on all the episodes, the one dish that stands out as the most memorable is Rachel’s famous Thanksgiving trifle, so I thought that would be the perfect treat!

For my trifle, I opted to modify the “beef sauteed with peas and onions” layer with something sweet that LOOKS like beef, peas, and onions…fudge cookies, green m&ms, and coconut!
Here’s my recipe:
Ingredients:
13-ounce package EL Fudge Cookies
1/4 cup shaved coconut
2 to 3 tablespoons round green candy-coated chocolate pieces (mini m&ms or Sixlets)
Two 3-ounce packages ladyfingers
3 oz. rum (you can definitely skip this ingredient if you want!)
1 cup seedless raspberry jam
2 1/2 cups vanilla pudding
1 cup whole raspberries
2 large bananas, sliced into rounds
2 cups whipped topping
Directions:
- For the “beef/peas/onions” layer: pulse the cookies in a food processor until they form clumps of crumbs. Place the crumbs in a bowl and stir in the coconut and m&ms.
- For the assembly: Line the bottom of the dish with ladyfingers; lay them flat so they overlap and cover the bottom completely. Pour 1.5 oz. of rum over the ladyfingers to soak
- Stir the raspberry jam until loosened and pourable, then spoon the 1/2 cup of jam over the ladyfingers, covering completely. Pour half of the vanilla pudding over the jam layer and spread it to the edges of the dish. Add an even layer of fresh raspberries on top of the custard.
- Repeat the ladyfingers layer, then pour over another 1.5 oz. of rum to soak.
- Add another layer each of jam, pudding, and raspberries.
- Spoon the cookie crumb “beef” layer over the ladyfingers and spread to the edges of the dish.
- Spoon the remaining pudding over the cookie crumbs using an offset spatula.
- Top the pudding with a single layer of bananas.
- Cover the bananas with the whipped cream and swirl decoratively using an offset spatula.
- Refrigerate the trifle for 1 1/2 hours. Serve chilled.
- Enjoy with F•R•I•E•N•D•S!
I loved getting to share this hilarious and delicious trifle dish with one of our besties who loves F•R•I•E•N•D•S as much as I do! Hopefully the Friends would approve, especially Joey, since this recipe has TWO layers of jam!
